Put the mint leaves in a glass and pour the lime juice over them. Next, add crushed pineapple. Add sugar and stir until the mint has been torn a few times. Tearing the mint leaves releases a little mint oil for just the hint of mint that you want. Now pour in the soda water and stir until the sugar dissolves. Add ice and garnish with the fresh pineapple. For the alcoholic version, you will need six mint leaves, several chunks of pineapple, two teaspoons of brown sugar, two oz. of dark rum, and a dash of pineapple juice. Crush the pineapple, mint and brown sugar together in a shaker, add rum and ice and shake. Strain into a glass filled with crushed ice. Add pineapple juice and stir. Garnish with a pineapple chunk and mint.
